Highly Addictive Ham Recipe

For your Easter potluck dinner. (Posting for personal friends at their request but anyone is welcome to grab this recipe for their own use) An easy ham recipe some have compared to 'crack' because it is oh-so-bad for you but so scrumptious and addictive at the same time. A sure favourite at your next potluck or family get-together. Nothing wrong with an occasional treat!

Preheat oven to 300F
Spray a roasting pan with Pam, then line the roasting pan with a double layer of tin foil. Make sure to leave an excess of foil to drape over each side of the top layer of foil, enough to easily wrap around the ham.

Spray the bottom of the top layer of tinfoil with Pam (You’ll understand WHY as we proceed)

Place one large spiral cut ham (or two spiral cut hams if they are smaller) in the centre of the pan.
Make a loose ‘packet’ with the top layer of foil around the ham, don’t shut it tight yet.

In a saucepan add:
1 can regular coke (not diet or coke zero or Pepsi)
1/2 cup BROWN sugar
4 whole cloves or 1/2 Tsp ground cloves
2 Tsp of your favourite dijon grainy mustard
2 Tsp ground cinnamon (or a couple pieces of cinnamon bark)
1/2 Tsp (scant) ground nutmeg.

Bring to a rolling simmer, lower heat to low and stir occasionally for 10 minutes. allowing the sauce to reduce. Strain (if you added whole cloves and cinnamon bark)

Pour sauce over the ham, seal tight and place in the oven. Cook for 1 1/2 hours. Do not peek!
Remove ham from oven, open packet carefully. (It will be steamy hot!! Wear oven mitts).
Turn oven up to 350F
Baste ham, return to the oven, with the packet opened, for another 15-20 minutes, basting every 10 minutes or so.

Remove from oven, let rest for 10 minutes before serving.

Do not use the remaining liquid for a gravy as it will be way too sweet and salty.
Serve with a spicy-grain mustard.
